so i went on www.hotvegan.net and decided to try one of the vegan recipes.

the result: success!

i baked the tofu, topped it with pesto and underneath, a bed of greens (i made a red/white wine vinaigrette dressing from scratch too!). whoever knew tofu was cheap, easy to make, yummy and quite filling!
